Buffalo Chicken Sliders 🔥

  • 3 large chicken breasts
  • 1 tbsp paprika
  • 1 tbsp garlic powder
  • 2 tsp onion powder
  • 2 tsp black pepper
  • 1 tbsp seasoning salt
  • 2 tbsp avocado oil
  • 3 tbsp butter
  • 4 cream cheese, softened
  • 1/2 cup cheddar cheese, shredded
  • 1/2 cup mozzarella or monterey jack, shredded
  • 1/2 cup green onions, finely sliced
  • 1/2 buffalo sauce (4.5 oz / 130 g) from @primalkitchenfoods
  • 4 tbsp butter
  • 1 tbsp fresh parsley, finely chopped
  • 3 garlic cloves, minced
  • 6 slice monterey jack cheese
  • 1/3 cup shredded mozzarella or monterey jack
  • Slider buns
  • Ranch, for spreading and dunking

    1. Season chicken generously on all sides.

    2. Heat avocado oil in a large pan over medium-high heat. Add chicken and cook 4 to 5 mins per side. Add 2 tbsp butter and baste until cooked through. Set aside.

    3. Preheat oven to 350°F / 175°C. While chicken is still warm, shred using a stand mixer, hand mixer, or two forks the old school way. Add cream cheese, cheddar, mozzarella or monterey jack, green onions, and buffalo sauce. Mix well.

    4. Make garlic herb butter by melting butter with garlic and parsley.

    5. Assemble sliders: Spread ranch on the bottom buns. Add monterey jack slices, then buffalo chicken. Pile it on. Optionally, top with shredded cheese. Add top buns and brush with garlic butter.

    6. Bake for 10 to 15 mins until cheese is melted. If baking longer than 15 minutes, loosely tent with foil so the tops don’t burn.

    7. Remove from oven, brush with more garlic butter. Dunk responsibly in ranch, buffalo sauce, or both.
