FETA-QUINOA SUMMER SALAD

Ingredients

  • 180 g quinoa
  • 1 medium-sized cucumber (finely sliced)
  • 1 small bunch of radishes
  • 1 handful of fresh herbs (I used a mix of mint leaves and basil)
  • 170 g feta
  • 2 large garlic cloves (pressed or finely minced)
  • 70 ml extra virgin olive oil
  • Juice of one lemon
  • 2 tbsp white wine vinegar
  • 1/2 tsp black pepper
  • 1/2 tsp salt (or more to taste)

Instructions

    Cook the quinoa according to the package instructions and let it cool.

    Slice the cucumber and radishes finely, and chop the herbs.

    In a small bowl, mix the garlic, olive oil, lemon juice, vinegar, pepper, and salt.

    Combine the cooled quinoa, veggies, herbs, and crumbled feta in a large bowl.

    Pour the dressing over the salad and toss until everything is well coated.
