Ingredients

  • 4 Cornish hens (about 1ΒΌ lb each)
  • 5 golden potatoes, peeled and cut into chunks
  • 2 red peppers, cut into large chunks
  • 1 to 2 red onions, cut into large chunks
  • 2 tbsp paprika
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 tbsp garlic powder
  • 1/2 cup olive oil
  • honey
  • 1 cup fresh orange juice

    Preheat your oven to 400Β°F

    Wash and pat dry the Cornish hens. You can also use whole chickens if needed.

    Place the hens in a large baking dish and arrange the potatoes, peppers, and onions all around.

    Season everything with the paprika, salt, black pepper, and garlic powder.

    Drizzle with olive oil and massage everything really well, making sure to get under the skin and inside the cavity of the hens.

    Pour the orange juice over everything and drizzle lightly with honey.

    Cover with parchment paper and seal tightly with foil.

    Bake for about 2 hours.

    Uncover, baste the hens, and bake for another 30 minutes until golden and caramelized.
