  • 1/4 cup Chia seeds
  • 1 cup Unsweetened almond milk
  • 1/2 cup Mixed berries (fresh or frozen)
  • 1/2 teaspoon Vanilla extract
  • 1 pinch Pinch of salt

    In a jar or bowl, combine the chia seeds, almond milk, vanilla extract, and a pinch of salt. Stir well to ensure there are no clumps.

    Add the mixed berries to the mixture and stir gently. If using frozen berries, they will release more liquid as they thaw, which is fine.

    Cover the jar or bowl and refrigerate for at least 4 hours, or preferably overnight, until the pudding has thickened to your desired consistency.

    Stir again before serving. You can add more fresh berries or a sprinkle of unsweetened shredded coconut for garnish, if desired.
