This dip is a party starter. Creamy, cheesy, and just enough heat to wake up your mouth. Serve it bubbling hot with some sturdy chips or baguette slices.

Preheat your oven to 375°F (190°C). Grab an 8x8 inch baking dish or something similar. Doesn't need to be fancy.
In a large bowl, beat the softened cream cheese until it's smooth. You want it fluffy, no lumps.
Stir in the mayo and sour cream until everything's combined. This is your base, make it creamy.
Add 1 cup of the cheddar cheese, chopped shrimp, green chiles, minced jalapeño, garlic powder, onion powder, and cayenne pepper. Mix well until the shrimp is evenly distributed. Don't overmix, though, or the shrimp will get mushy.
Spread the mixture evenly into your baking dish. Sprinkle the remaining 1/2 cup of cheddar cheese over the top. This will give you that golden crust.
Bake for 18-20 minutes, or until the dip is bubbly around the edges and the top is a nice golden brown. If your cheese isn't browning, crank the broiler for 1-2 minutes, but watch it like a hawk – it burns fast.
Remove from oven and let it sit for 5 minutes. It's hot, so don't burn your tongue. If you're using chives, sprinkle them on now. Serve hot with tortilla chips or toasted baguette slices.
