In a pot, add water, chicken bouillon & chicken, bring to a boil and cook for 25 minutes until chicken is cooked through
Remove chicken, shred it then add back to your stock along with uncooked rice and salt. Cook for 15-20 minutes until rice is fully cooked
In a bowl, add eggs and lemon and whisk to combine. Mix through 1 cup of the stock from your pot. This way it makes the egg mixture creamy. If you were to add the egg straight to your soup it will scramble the eggs
Serve topped with dill, cracked pepper, more olive oil and enjoy
