This is a super high-volume, high-protein meal prep that actually tastes insane. It’s a cheesy enchilada-style shredded chicken over jasmine rice that stays flavorful all week and keeps you full while staying in a deficit.

Add chicken, enchilada sauce, broth, green chiles, garlic, and seasonings to crockpot
Cook on high for 4.5 hours
Remove chicken and shred (KitchenAid or forks)
Add shredded chicken back into sauce
Stir in cheese until melted
Cook jasmine rice separately
Portion rice + chicken evenly into 8 containers
