Crack the eggs into a bowl, add salt and pepper, and whisk until well combined.
Heat the olive oil in a non-stick pan over medium heat.
Add the spinach to the pan and cook until wilted, about 1-2 minutes.
Pour the whisked eggs over the spinach. Let them set for about 30 seconds without stirring.
Gently push the cooked edges of the eggs towards the center, allowing the uncooked egg to flow underneath. Continue cooking and stirring occasionally until the eggs are almost set but still slightly moist.
Sprinkle the cheddar cheese over the eggs and cook for another 30 seconds, or until the cheese is melted.
Serve immediately and enjoy your protein-packed breakfast!
