Boil the cubed sweet potato in salted water until fork-tender, about 12 to 15 minutes. Drain well.
Mash the sweet potatoes with unsalted butter, heavy cream, maple syrup, and a pinch of salt until completely smooth and creamy. Keep warm.
Toss the cauliflower florets with 1 tablespoon of olive oil, salt, and pepper. Roast in an oven preheated to 400°F (200°C) for 15 to 20 minutes until tender and lightly browned.
